Spring is one of my favorite times of the year, and one reason is because fresh food finds inspire me to make colorful food dishes. This one is my
Sweet Potato Pasta and Kale Salad.

Ok, guys here is the deal… I am usually an eye-baller when it comes to ingredients, so feel free to change things up a little to get the desired taste. For instances, if you want something a little light, use more Kale then pasta. Or if you like your pasta to have a salty taste, don’t add as much sugar to your dressing and use a little extra sea salt on top.

Ingredients:
- Sweet Potatoe Pasta (or your favorite pasta)
- Fresh Kale
- Cherry Tomatoes
- 2 Chicken Breast
- Honey Glaze Rub
- Onion Salt
Steps:
Grill your chicken. I love using Weber Honey Garlic Rub on everything! That and a little bit of Onion Salt will make your chicken extremely flavorful.
Cook and rinse your pasta… Make sure you use a little bit of sea salt and olive oil in your water. Set it aside once cooked.
Cook and rinse your pasta… Set it aside. Chop-up Kale, tomatoes, and chicken. Add all of your ingredients in a bowl and mix. Pour on dressing once completed and serve.
Note: Onion Salt is a great substitute for regular salt and has amazing flavor.
Dressing:
- White Wine Vinegar
- Balsamic Vinegar
- Olive Oil
- Sugar
- Salt
- Pepper
Steps:
I like to keep my dressings simple. When using Balsamic and Vinegar, the trick is to balance out the acid with sugar. Pour equal portions of White Wine Vinegar, Balsamic Vinegar in a bowl, and slowly whisk in sugar to balance out the acid flavor.
